Vineyards exposed to the south, south-east, 280 meters above sea level. Soil mixture: clay. Organic cultivation, density 3,500 vines per hectare. Guyot setup with Simonit-Sirch method pruning. Crushing by destemming, spontaneous fermentation with indigenous yeasts and 5-day maceration.
No temperature control. The wine, unfiltered and naturally decanted, is bottled after a brief refinement in steel, with the addition of previously preserved must. With the favor of spring temperatures and the indigenous yeasts present in the must, fermentation starts again spontaneously. The residues of the same remain in the bottle and characterize this wine.
Red wine naturally refermented in the bottle (Pet-nat). Ruby red color, persistent, slightly aromatic aroma with notes of red fruit, balanced taste, with a note of right acidity and pleasant tannin.
Ideal with bread and salami and in company, suitable for the whole meal. Recommended temperature 10° - 12°C, but also excellent at the conventional temperature for reds of 16° - 18°C.
