“Il Vino trasmette il lavoro della terra, della pianta, del cielo e dell’uomo”
(The wine transmits the work of the earth, the plant, the sky and man.) Wine: 80% Chardonnay and 20% Erbaluce, 24 months of aging in stainless steel, of which 60% in cask. Plot: Chabloz Region, Aosta hill. Altitude and exposure: 600mt s.l.m., southern exposure. Soil: particularly draining, thanks to its sandy loam and gravely skeleton-rich composition. Vineyard age: vineyard planted in 1987. Guyot Harvest: September 1st. Kg of grapes per square meter: 0.4 Kg. Vinification: the grapes are pressed in whole bunches; the juice decanted one night for the elimination of large lees. The fermentation starts with indigenous yeasts, prepared a few days before by the same grapes (pied de cuve). Malolactic fermentation occurs spontaneously. The wine is free from clarification and filtration thanks to the winter rest. Before bottling, two decantings are made in the right moon phases. Aging: 40% Steel, 60% barrel for 24 months. Total sulfites: 50 mg / l. Alcohol content: 14% vol. Bottles produced: 1080 bottles. |
