Bobotti Wine: 100% Cannonau DOC Plot: Mamoiada - Sardegna Altitude and exposure: Vineyard age: 25 - 100+ years old. Harvest: End of September 45 Quintali/Ettaro Vinification: the grapes are pressed in whole bunches; the juice decanted one night for the elimination of large lees. The fermentation starts with indigenous yeasts, prepared a few days before by the same grapes (pied de cuve). Malolactic fermentation occurs spontaneously. The wine is free from clarification and filtration thanks to the winter rest. Before bottling, two decantings are made in the right moon phases.
