The Funambol of Podere SottoilNoce is made up of two trebbiano cultivars: the modenese trebbiano and the spanish trebbiano. The vineyard is biodynamic and is characterized by small plots of different vineyards in castelvetro di modena, all completely covered with grass, fertilized with annual and non-irrigated green manures. The harvest, manual in boxes, was carried out on September 25, 2018. The grapes were pressed in whole bunches with soft pressing. The fermentation took place by indigenous yeasts in a sandstone vessel (CLAYVER). From that moment on, only clean decanting. No filtrations, clarifications, invasive procedures and the addition of any additive or corrective were carried out. The Funambol by Podere SottoilNoce is a sulphite-free wine bottled on March 27, 2019 with a waning moon. |
