Blanc de Noir from Petit Rouge and Gamay vines. An original creation that offers flavor and minerality, a wine built like our mountains.
Wine: Petit Rouge 60%, Gamay 40%. Plot: Chabloz region, Aosta hill. Altitude and exposure: 650m s.l.m., southern exposure. Soil: particularly draining, thanks to its sandy loam composition rich in gravely skeletons. Age of the vines: vines planted in 1972 and 1990. Guyot. Harvest: 18 September. Kg of grapes per square meter: 0.4 Kg. Vinification: the grapes are pressed into whole bunches; only the heart of the print is used for winemaking. The juice decant one night for the elimination of large lees. Fermentation begins with indigenous yeasts, prepared a few days before by the same grapes (pied de cuve). Malolactic fermentation occurs spontaneously. The wine is free of clarification and filtration thanks to the winter rest. Before bottling, two decantations are performed in the right moon phases. Aging: in steel for 12 months. Total sulfites: 25 mg / l. Alcohol content: 13% vol. Bottles produced: 400 bottles. |
